DaiLo has been around for more than a decade, and Liu chalks up its success to the constant pursuit of innovation. “While many of our ideas are inspired by traditional dishes, we reimagine them, experimenting with diverse cultural flavour profiles to create something fresh and unexpected,†he says. And while they keep a few signature faves on the menu, they also offer six rotating features that change frequently to keep things exciting. He also brings in fancy chefs for intriguing collaborations; next up on July 20 is an east-meets-west Hong Kong Night event with “MasterChef Canada†judge Alvin Leung, the acclaimed chef behind Bo Innovation in Hong Kong.
